Ingredients
- 2 lbs. boneless, skinless chicken breast
- 2 cans cream of chicken soup (each 10 1/2 ounces)
- 3 cups chicken stock
- 1 16 oz can refrigerated biscuit dough
Amish Chicken and Dumplings Recipe (Slow Cooker)
1. Add the chicken.
- Spray slow cooker lightly. Place chicken breasts on bottom.
- Pour chicken broth over chicken. Top with cream of chicken soup.
- No need to get it perfectly mixed up at this stage. As the soup heats it will melt into the broth.
2. Cook chicken
- Cover and cook on LOW for 5 to 6 hours, or until chicken is tender and reaches 165 degrees F.
- Remove chicken from slow cooker and shred with two forks.
- Return the shredded chicken to the creamy broth, stir gently.
3. Make the dumplings
- Cut each biscuit into smaller pieces while still refrigerated. If your biscuits are large, it’s a good idea to cut each one into quarters.
- Carefully drop the biscuit pieces into the hot chicken mixture, spreading them around the surface instead of piling them all in one place.
4. Prepare the potstickers
- Replace the lid on the slow cooker and cook on HIGH for about 45 to 60 minutes, or until the biscuit pieces are cooked through and fluffy in the center.
- Try not to keep opening the lid as the dumplings cook. This keeps the heat trapped in so they will cook properly.
- When dumplings are done, stir chicken and creamy broth gently around dumplings.
